  • Cayenne pepper - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges for serving

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, red bell pepper, carrot, and celery. Cook for another 5 minutes until the vegetables soften.
  4. Add the diced zucchini and chopped tomato, stirring for an additional 3 minutes.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Add the soaked and chopped seaweed, paprika, saffron, cayenne pepper (if using), salt, and black pepper. Stir well.
