- Vegetable broth - 500 ml
- Seaweed (nori or wakame) - 5 grams, soaked and chopped
- Paprika - 1 teaspoon
- Saffron strands - a pinch
- Cayenne pepper - 1/4 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges for serving
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, red bell pepper, carrot, and celery. Cook for another 5 minutes until the vegetables soften.
- Add the diced zucchini and chopped tomato, stirring for an additional 3 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add the soaked and chopped seaweed, paprika, saffron, cayenne pepper (if using), salt, and black pepper. Stir well.
- Cover and let the soup simmer for 15 minutes, allowing the flavors to meld.
- Taste and adjust seasoning if necessary. Remove from heat and stir in the chopped parsley.
- Serve hot, garnished with lemon wedges.
