- Red bell pepper - 1/2, diced
- Tomato paste - 1 tablespoon
- Fish stock - 500 ml
- Cauliflower - 200 grams, riced
- Shrimp - 150 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Squid - 100 grams, cleaned and sliced
- Paprika - 1 teaspoon
- Saffron - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, cooking until soft and fragrant, about 2-3 minutes.
- Stir in the diced red bell pepper and cook for another 2-3 minutes until it starts to soften.
- Add the tomato paste, stirring well to combine, and cook for an additional 2 minutes.
- Pour in the fish stock and bring to a simmer. Add the riced cauliflower, saffron, paprika, salt, and black pepper. Cook for 5 minutes until the cauliflower is tender.
- Add the shrimp, mussels, and squid to the pot. Simmer for an additional 5-7 minutes or until the seafood is cooked through and the mussels have opened.
- Taste and adjust the seasoning if necessary. Remove from heat and let it sit for a couple of minutes.
- Serve hot, garnished with fresh parsley.
