Ingredients

  • Celery - 1 stalk, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Soak the dried white beans in water overnight or for at least 8 hours.
  2. Drain and rinse the beans, then place them in a pot with fresh water and bring to a boil. Cook for about 30 minutes or until tender, then drain and set aside.
  3. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
  4. Add the diced tomato, cooked beans, vegetable broth, bay leaf, paprika, salt, and black pepper to the pot. Bring to a simmer.
  5. Reduce the heat and let it cook gently for about 30 minutes, allowing the flavors to meld together.
  6. Remove the bay leaf and taste for seasoning. Adjust salt and pepper as needed.
