- Dried white beans - 100 grams

- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Bay leaf - 1
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Soak the dried white beans in water overnight or for at least 8 hours.
- Drain and rinse the beans, then place them in a pot with fresh water and bring to a boil. Cook for about 30 minutes or until tender, then drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté for about 5-7 minutes until the vegetables are softened.
- Add the diced tomato, cooked beans, vegetable broth, bay leaf, paprika, salt, and black pepper to the pot. Bring to a simmer.
- Reduce the heat and let it cook gently for about 30 minutes, allowing the flavors to meld together.
- Remove the bay leaf and taste for seasoning. Adjust salt and pepper as needed.
- Ladle the soup into bowls, garnish with fresh parsley, and serve hot.
