Ingredients

  • Celery - 1 stalk, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 750 milliliters
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fideo noodles (or vermicelli) - 100 grams
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot, celery, and bell pepper to the pot and sauté for another 5 minutes.
  5. Incorporate the diced tomato, vegetable broth, tomato paste, paprika, cumin, salt, and black pepper. Bring the mixture to a boil.
  6. Once boiling, lower the heat and let it simmer for about 10 minutes to allow the flavors to meld.
  7. Add the fideo noodles to the soup and cook for another 5-7 minutes, or until the noodles are tender.
  8. Taste and adjust seasoning if necessary.
  9. Serve hot, garnished with fresh parsley.
