- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 750 milliliters
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fideo noodles (or vermicelli) - 100 grams
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot, celery, and bell pepper to the pot and sauté for another 5 minutes.
- Incorporate the diced tomato, vegetable broth, tomato paste, paprika, cumin, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, lower the heat and let it simmer for about 10 minutes to allow the flavors to meld.
- Add the fideo noodles to the soup and cook for another 5-7 minutes, or until the noodles are tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
