  • Carrot - 1 medium, diced
  • Potato - 1 medium, peeled and diced
  • Vegetable broth - 500 milliliters
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced carrot and potato to the pot, stirring occasionally for about 5 minutes.
  3. Sprinkle in the cumin, salt, and black pepper, then pour in the vegetable broth. Bring to a boil, then reduce heat and let simmer for 15 minutes, or until the potatoes are tender.
  4. Add the fresh spinach to the pot and cook for an additional 5 minutes until wilted.
  5. Remove from heat and blend the soup until smooth using an immersion blender or a regular blender.
  6. Stir in the lemon juice and adjust seasoning if necessary.
