- Cumin - 1 teaspoon

- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrot and potato to the pot, stirring occasionally for about 5 minutes.
- Sprinkle in the cumin, salt, and black pepper, then pour in the vegetable broth. Bring to a boil, then reduce heat and let simmer for 15 minutes, or until the potatoes are tender.
