Ingredients

  • Fresh asparagus - 250 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Vegetable broth - 500 ml
  • Heavy cream - 50 ml
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Trim the tough ends off the asparagus and cut them into 2-inch pieces.
  2. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft, about 3-4 minutes.
  3. Add the asparagus pieces to the pot and continue to sauté for another 5 minutes until they are tender.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes.
  5. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches.
  6. Stir in the heavy cream, lemon juice, salt, and black pepper to taste. Heat through for another 2-3 minutes.
  7. Serve hot, garnished with fresh parsley.
