- Fresh asparagus - 250 grams
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 500 ml
- Heavy cream - 50 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Trim the tough ends off the asparagus and cut them into 2-inch pieces.
- In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until soft, about 3-4 minutes.
- Add the asparagus pieces to the pot and continue to sauté for another 5 minutes until they are tender.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 15 minutes.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a countertop blender in batches.
- Stir in the heavy cream, lemon juice, salt, and black pepper to taste. Heat through for another 2-3 minutes.
- Serve hot, garnished with fresh parsley.
