  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Chickpeas - 100 grams, cooked (optional for added protein)

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the chopped onion, garlic, carrot, and celery until softened, about 5-7 minutes.
  2. Add the cumin, salt, and black pepper, stirring for another minute to release the spices' aroma.
  3. Pour in the vegetable broth and bring to a boil. Add the green peas and chickpeas (if using) and reduce heat to a simmer.
  4. Cook for 15 minutes, allowing the flavors to meld and the peas to soften.
