- Vegetable broth - 750 ml
- White wine - 100 ml
- Tomato paste - 2 tablespoons
- Bay leaves - 2
- Thyme - 1 teaspoon, dried
- Paprika - 1 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon (adjust to taste)
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, and sauté for another minute until fragrant.
- Add the red bell pepper, carrot, and celery to the pot, and cook for 5-7 minutes until they begin to soften.
- Stir in the zucchini and cook for an additional 3 minutes.
- Add the vegetable broth, white wine, tomato paste, bay leaves, thyme, paprika, salt, and black pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Remove the bay leaves, and stir in the fresh parsley and lemon juice.
- Serve hot, garnished with additional parsley if desired.
