  • Vegetable broth - 750 ml
  • White wine - 100 ml
  • Tomato paste - 2 tablespoons
  • Bay leaves - 2
  • Thyme - 1 teaspoon, dried
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon (adjust to taste)
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, and sauté for another minute until fragrant.
  4. Add the red bell pepper, carrot, and celery to the pot, and cook for 5-7 minutes until they begin to soften.
  5. Stir in the zucchini and cook for an additional 3 minutes.
  6. Add the vegetable broth, white wine, tomato paste, bay leaves, thyme, paprika, salt, and black pepper to the pot.
  7. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  8. Remove the bay leaves, and stir in the fresh parsley and lemon juice.
  9. Serve hot, garnished with additional parsley if desired.
