Ingredients

  • Beef stew meat - 300 grams
  • Red bell pepper - 1, diced
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Canned diced tomatoes - 400 grams
  • Red wine - 100 ml
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Vegetable broth - 200 ml

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and diced red bell pepper, sautéing until softened, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the beef stew meat, browning it on all sides for about 5-7 minutes.
  4. Stir in the paprika and cumin, cooking for 1 minute more to release their flavors.
  5. Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for 3-4 minutes.
  6. Add the canned diced tomatoes and vegetable broth, along with salt and black pepper. Bring to a boil.
  7. Reduce the heat to low, cover, and let it simmer for 35-40 minutes until the beef is tender.
  8. Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
