- Beef stew meat - 300 grams
- Red bell pepper - 1, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Canned diced tomatoes - 400 grams
- Red wine - 100 ml
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 1 tablespoon, chopped
- Vegetable broth - 200 ml
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and diced red bell pepper, sautéing until softened, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the beef stew meat, browning it on all sides for about 5-7 minutes.
- Stir in the paprika and cumin, cooking for 1 minute more to release their flavors.
- Pour in the red wine, scraping the bottom of the pot to deglaze, and let it simmer for 3-4 minutes.
- Add the canned diced tomatoes and vegetable broth, along with salt and black pepper. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 35-40 minutes until the beef is tender.
- Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
