- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red wine - 100 ml
- Orange juice - 50 ml
- Lemon juice - 25 ml
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the grill to medium-high heat.
- Chop the red bell pepper, zucchini, red onion, and eggplant into bite-sized pieces.
- In a mixing bowl, combine the chopped vegetables with cherry tomatoes, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Toss well to coat.
- In a separate bowl, mix the red wine, orange juice, and lemon juice to create the sangría marinade.
- Add half of the sangría marinade to the vegetable mixture and let it marinate for 15 minutes.
- Thread the marinated vegetables onto skewers or place them directly on the grill.
- Grill the vegetables for about 10-15 minutes, turning occasionally until they are tender and slightly charred.
- Once grilled, drizzle the remaining sangría marinade over the vegetables and sprinkle with fresh parsley before serving.
