  • Cherry tomatoes - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red wine - 100 ml
  • Orange juice - 50 ml
  • Lemon juice - 25 ml
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the grill to medium-high heat.
  2. Chop the red bell pepper, zucchini, red onion, and eggplant into bite-sized pieces.
  3. In a mixing bowl, combine the chopped vegetables with cherry tomatoes, olive oil, minced garlic, paprika, cumin, salt, and black pepper. Toss well to coat.
  4. In a separate bowl, mix the red wine, orange juice, and lemon juice to create the sangría marinade.
  5. Add half of the sangría marinade to the vegetable mixture and let it marinate for 15 minutes.
  6. Thread the marinated vegetables onto skewers or place them directly on the grill.
  7. Grill the vegetables for about 10-15 minutes, turning occasionally until they are tender and slightly charred.
  8. Once grilled, drizzle the remaining sangría marinade over the vegetables and sprinkle with fresh parsley before serving.
