Ingredients

  • Salmon fillets - 2 (about 150g each)

  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Zucchini - 1 medium, sliced
  • Red bell pepper - 1, sliced
  • Cherry tomatoes - 150g, halved
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, mix together olive oil, minced garlic, paprika, lemon juice, salt, and black pepper to create a marinade.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 10 minutes.
  3. While the salmon is marinating, heat a non-stick grill pan over medium-high heat.
  4. Add the marinated salmon fillets to the pan and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
  5. In another pan, heat a tablespoon of olive oil over medium heat. Add the sliced zucchini, red bell pepper, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender.
