- Paprika - 1 teaspoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Zucchini - 1 medium, sliced
- Red bell pepper - 1, sliced
- Cherry tomatoes - 150g, halved
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a small bowl, mix together olive oil, minced garlic, paprika, lemon juice, salt, and black pepper to create a marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for about 10 minutes.
- While the salmon is marinating, heat a non-stick grill pan over medium-high heat.
- Add the marinated salmon fillets to the pan and cook for about 4-5 minutes on each side, or until the salmon is cooked through and has nice grill marks.
- In another pan, heat a tablespoon of olive oil over medium heat. Add the sliced zucchini, red bell pepper, and cherry tomatoes. Sauté for about 5-7 minutes until the vegetables are tender.
