Ingredients

  • Salmon fillets - 2 (about 150g each)
  • Fresh orange juice - 60 ml
  • Orange zest - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh thyme - 2 sprigs (or 1 teaspoon dried thyme)
  • Salt - to taste
  • Black pepper - to taste
  • Sliced orange - 1 for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, mix the fresh orange juice, orange zest, minced garlic, olive oil, salt, and black pepper.
  3. Place the salmon fillets in a baking dish and pour the orange mixture over them, ensuring they are well coated.
  4. Add the sprigs of thyme on top of the salmon.
  5. Bake in the preheated oven for 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Remove from the oven and let it rest for a couple of minutes.
  7. Serve garnished with slices of fresh orange and a drizzle of the pan juices.
