Ingredients
- Red bell peppers - 2 medium (about 300g)
- Tomato - 1 medium (about 150g), diced
- Almonds - 50g, toasted
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Red wine vinegar - 1 tablespoon (15ml)
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat the oven to 200°C (400°F).
- Place the red bell peppers on a baking sheet and roast in the oven for 20-25 minutes, turning occasionally, until the skins are blistered and blackened.
- Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for about 10 minutes.
- Once cooled, peel off the skins, remove the seeds, and chop the peppers.
- In a blender or food processor, combine the roasted peppers, diced tomato, toasted almonds, minced garlic, olive oil, red wine vinegar, smoked paprika, salt, and black pepper.
- Blend until smooth, scraping down the sides as necessary. Adjust the seasoning to taste.
- Serve the Romesco Sauce at room temperature or slightly chilled.
- Enjoy it as a dip with fresh vegetables or as a sauce with grilled vegetables or vegan dishes.
