Ingredients

  • Red bell peppers - 2 medium (about 300g)
  • Tomato - 1 medium (about 150g), diced
  • Almonds - 50g, toasted
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Red wine vinegar - 1 tablespoon (15ml)
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the red bell peppers on a baking sheet and roast in the oven for 20-25 minutes, turning occasionally, until the skins are blistered and blackened.
  3. Remove the peppers from the oven, place them in a bowl, and cover with plastic wrap to steam for about 10 minutes.
  4. Once cooled, peel off the skins, remove the seeds, and chop the peppers.
  5. In a blender or food processor, combine the roasted peppers, diced tomato, toasted almonds, minced garlic, olive oil, red wine vinegar, smoked paprika, salt, and black pepper.
  6. Blend until smooth, scraping down the sides as necessary. Adjust the seasoning to taste.
  7. Serve the Romesco Sauce at room temperature or slightly chilled.
  8. Enjoy it as a dip with fresh vegetables or as a sauce with grilled vegetables or vegan dishes.
