Ingredients

  • Manchego cheese - 150 grams
  • Zucchini - 100 grams
  • Red bell pepper - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Eggs - 2 large
  • Paprika - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. 1. Begin by washing and chopping the zucchini and red bell pepper into small, bite-sized pieces.
  2. 2. In a medium skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
  3. 3. Add the chopped zucchini and red bell pepper to the skillet, seasoning with salt and black pepper. Sauté for 5-7 minutes until the vegetables are tender.
  4. 4. While the vegetables are cooking, beat the eggs in a bowl and season with a pinch of salt and paprika.
  5. 5. Once the vegetables are ready, push them to one side of the skillet and pour the beaten eggs into the other side. Allow them to cook undisturbed for about 2-3 minutes until they start to set.
  6. 6. Grate the Manchego cheese over the eggs and vegetables, then cover the skillet for an additional 2-3 minutes until the cheese melts and the eggs are cooked to your preference.
  7. 7. Remove from heat, garnish with fresh parsley, and serve immediately.
