Steps
- 1. Begin by washing and chopping the zucchini and red bell pepper into small, bite-sized pieces.
- 2. In a medium skillet, heat the olive oil over medium heat and add the minced garlic, sautéing for about 1 minute until fragrant.
- 3. Add the chopped zucchini and red bell pepper to the skillet, seasoning with salt and black pepper. Sauté for 5-7 minutes until the vegetables are tender.
- 4. While the vegetables are cooking, beat the eggs in a bowl and season with a pinch of salt and paprika.
- 5. Once the vegetables are ready, push them to one side of the skillet and pour the beaten eggs into the other side. Allow them to cook undisturbed for about 2-3 minutes until they start to set.
