Ingredients
- Russet potatoes - 400 grams
- Garlic - 5 cloves
- Olive oil - 2 tablespoons
- Almond milk - 100 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Wrap the garlic cloves in aluminum foil and drizzle with 1 tablespoon of olive oil. Roast in the oven for about 20 minutes until soft and caramelized.
- While the garlic is roasting, peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until fork-tender.
- Once the potatoes are cooked, drain them and return them to the pot. Squeeze the roasted garlic cloves out of their skins into the potatoes.
- Add the remaining tablespoon of olive oil and the almond milk to the pot. Mash everything together until smooth and creamy. Adjust the consistency with more almond milk if desired.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
