Ingredients

  • Russet potatoes - 400 grams
  • Garlic - 5 cloves
  • Olive oil - 2 tablespoons
  • Almond milk - 100 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wrap the garlic cloves in aluminum foil and drizzle with 1 tablespoon of olive oil. Roast in the oven for about 20 minutes until soft and caramelized.
  3. While the garlic is roasting, peel and chop the potatoes into even chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until fork-tender.
  4. Once the potatoes are cooked, drain them and return them to the pot. Squeeze the roasted garlic cloves out of their skins into the potatoes.
  5. Add the remaining tablespoon of olive oil and the almond milk to the pot. Mash everything together until smooth and creamy. Adjust the consistency with more almond milk if desired.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with fresh parsley.
