- Potatoes - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Vegetable broth - 200 ml
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - to taste
Steps
- Peel and chop the potatoes into equal-sized chunks for even cooking.
- In a large pot, add the chopped potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until tender.
- While the potatoes are cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Once the potatoes are cooked, drain them and return them to the pot. Add the sautéed garlic, vegetable broth, nutritional yeast, lemon juice, salt, and black pepper.
- Using a potato masher or a hand mixer, mash the mixture until smooth and creamy. Adjust the consistency with more vegetable broth if needed.
- Taste and adjust the seasoning before serving warm.
