Ingredients

  • Potatoes - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 200 ml
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - to taste

Steps

  1. Peel and chop the potatoes into equal-sized chunks for even cooking.
  2. In a large pot, add the chopped potatoes and cover them with water. Bring to a boil and cook for about 15-20 minutes, or until tender.
  3. While the potatoes are cooking, heat the olive oil in a small pan over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Once the potatoes are cooked, drain them and return them to the pot. Add the sautéed garlic, vegetable broth, nutritional yeast, lemon juice, salt, and black pepper.
  5. Using a potato masher or a hand mixer, mash the mixture until smooth and creamy. Adjust the consistency with more vegetable broth if needed.
  6. Taste and adjust the seasoning before serving warm.
