Ingredients

  • Cauliflower - 400 grams
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Butter - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Parmesan cheese - 30 grams
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Trim the cauliflower and cut it into florets.
  2. In a large pot, bring salted water to a boil and add the cauliflower florets and peeled garlic cloves.
  3. Cook for about 15-20 minutes, or until the cauliflower is tender.
  4. Drain the cauliflower and garlic, then return them to the pot.
  5. Add olive oil, butter, salt, black pepper, and Parmesan cheese to the pot.
  6. Using an immersion blender or food processor, blend until smooth and creamy.
  7. Taste and adjust seasoning if necessary.
  8. Transfer the purée to a serving bowl and garnish with chopped parsley before serving.
