- Chickpeas - 200 grams, cooked (or 1 can, drained and rinsed)
- Vegetable broth - 750 ml
- Smoked paprika - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook for 5 minutes until it becomes translucent.
- Stir in the minced garlic, diced carrot, and diced celery; cook for another 5 minutes.
- Add the cubed potatoes and green beans, stirring well to combine with the vegetables.
- Pour in the vegetable broth and add the cooked chickpeas, smoked paprika, bay leaf, salt, and black pepper.
- Bring to a boil, then reduce the heat and simmer for 25 minutes, or until the vegetables are tender.
- Remove the bay leaf and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
