  • Green beans - 100 grams, trimmed and cut into pieces
  • Chickpeas - 200 grams, cooked (or 1 can, drained and rinsed)
  • Vegetable broth - 750 ml
  • Smoked paprika - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook for 5 minutes until it becomes translucent.
  3. Stir in the minced garlic, diced carrot, and diced celery; cook for another 5 minutes.
  4. Add the cubed potatoes and green beans, stirring well to combine with the vegetables.
  5. Pour in the vegetable broth and add the cooked chickpeas, smoked paprika, bay leaf, salt, and black pepper.
  6. Bring to a boil, then reduce the heat and simmer for 25 minutes, or until the vegetables are tender.
  7. Remove the bay leaf and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
