  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 500ml
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Spinach - 100g, fresh
  • Fresh parsley - for garnish

Steps

  1. Rinse the soaked chickpeas and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
  4. Stir in the diced carrot and red bell pepper, cooking for another 5 minutes until they begin to soften.
  5. Add the chopped tomato, paprika, and cumin, stirring well to combine, and cook for another 5 minutes.
  6. Pour in the vegetable broth and add the chickpeas. Bring to a boil.
  7. Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the chickpeas are tender.
  8. Season with salt and black pepper to taste, and stir in the fresh spinach until wilted.
  9. Serve hot, garnished with fresh parsley.
