- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Vegetable broth - 500ml
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Spinach - 100g, fresh
- Fresh parsley - for garnish
Steps
- Rinse the soaked chickpeas and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until soft and translucent, about 5 minutes.
- Stir in the diced carrot and red bell pepper, cooking for another 5 minutes until they begin to soften.
- Add the chopped tomato, paprika, and cumin, stirring well to combine, and cook for another 5 minutes.
- Pour in the vegetable broth and add the chickpeas. Bring to a boil.
- Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the chickpeas are tender.
- Season with salt and black pepper to taste, and stir in the fresh spinach until wilted.
- Serve hot, garnished with fresh parsley.
