  • Pork belly - 500 grams
  • Olive oil - 2 tablespoons
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, chopped
  • Smoked paprika - 2 teaspoons
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili powder - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Cilantro - 1/4 cup, chopped
  • Water - 250 ml

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a large bowl, combine olive oil, minced garlic, chopped onion, smoked paprika, cumin, oregano, salt, black pepper, chili powder, and lime juice to create a marinade.
  3. Cut the pork belly into 2-3 large pieces and coat them thoroughly with the marinade, ensuring all sides are well covered. Let it marinate for at least 30 minutes.
  4. In a large oven-safe pot, add the marinated pork belly and pour in the water. Cover the pot with a lid or aluminum foil.
  5. Place the pot in the preheated oven and cook for 2.5 hours until the pork is tender and easily pulled apart.
  6. Once cooked, remove the pot from the oven and let the pork rest for 10 minutes before slicing.
  7. Serve the pork belly topped with chopped cilantro and accompanied by fresh tortillas and salsa.
