- Olive oil - 2 tablespoons
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Smoked paprika - 2 teaspoons
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chili powder - 1 teaspoon
- Lime juice - 2 tablespoons
- Cilantro - 1/4 cup, chopped
- Water - 250 ml
Steps
- Preheat your oven to 150°C (300°F).
- In a large bowl, combine olive oil, minced garlic, chopped onion, smoked paprika, cumin, oregano, salt, black pepper, chili powder, and lime juice to create a marinade.
- Cut the pork belly into 2-3 large pieces and coat them thoroughly with the marinade, ensuring all sides are well covered. Let it marinate for at least 30 minutes.
- In a large oven-safe pot, add the marinated pork belly and pour in the water. Cover the pot with a lid or aluminum foil.
- Place the pot in the preheated oven and cook for 2.5 hours until the pork is tender and easily pulled apart.
- Once cooked, remove the pot from the oven and let the pork rest for 10 minutes before slicing.
- Serve the pork belly topped with chopped cilantro and accompanied by fresh tortillas and salsa.
