Ingredients

  • Almond flour - 150 grams
  • Powdered sugar - 50 grams
  • Unsalted butter - 75 grams, softened
  • Cinnamon powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Whole almonds - 30 grams, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, powdered sugar, cinnamon, and salt. Mix well.
  3. Add the softened butter and vanilla extract to the dry ingredients. Using your hands or a spatula, mix until a dough forms.
  4. Divide the dough into small balls (about 20 grams each) and flatten them slightly to form discs.
  5. Place the discs on the prepared baking sheet and sprinkle the chopped almonds on top of each cookie.
  6. Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
