- Almond flour - 150 grams
- Powdered sugar - 50 grams
- Unsalted butter - 75 grams, softened
- Cinnamon powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Whole almonds - 30 grams, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the almond flour, powdered sugar, cinnamon, and salt. Mix well.
- Add the softened butter and vanilla extract to the dry ingredients. Using your hands or a spatula, mix until a dough forms.
- Divide the dough into small balls (about 20 grams each) and flatten them slightly to form discs.
- Place the discs on the prepared baking sheet and sprinkle the chopped almonds on top of each cookie.
- Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
