Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the all-purpose flour, almond flour, powdered sugar, cinnamon powder, and salt until well combined.
- Add the vegetable oil and vanilla extract to the dry ingredients and mix until a crumbly dough forms.
- Fold in the chopped almonds until evenly distributed.
- Divide the dough into small balls (about 20 grams each) and flatten them slightly to form discs.
- Place the discs on a baking sheet lined with parchment paper, leaving space between each.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden.
- Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
