- potatoes (medium, peeled and diced) - 200 grams
- red bell pepper (diced) - 50 grams
- onion (diced) - 50 grams
- chorizo (sliced) - 100 grams
- olive oil - 2 tablespoons
- shredded mozzarella cheese - 100 grams
- fresh parsley (chopped) - 2 tablespoons
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
Steps
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes until they are tender and slightly golden, stirring occasionally.
- Add the diced onion and red bell pepper to the skillet with the potatoes, season with salt and pepper, and cook for another 5 minutes until the vegetables are softened.
- In a separate bowl, beat the eggs and season with a pinch of salt and pepper. Once the vegetables are cooked, add the chorizo slices to the skillet and cook for an additional 2 minutes.
- Pour the beaten eggs over the potato and vegetable mixture, spreading it evenly. Cook on low heat for about 8-10 minutes until the edges start to set.
- Preheat your oven to 200°C (400°F). Once the edges are set, sprinkle the mozzarella cheese on top and transfer the skillet to the oven.
- Bake for 5-7 minutes until the cheese is melted and bubbly. Remove from the oven and let it cool slightly before slicing.
- Garnish with chopped fresh parsley and serve warm.
