Ingredients

  • large eggs - 4
  • potatoes (medium, peeled and diced) - 200 grams
  • red bell pepper (diced) - 50 grams
  • onion (diced) - 50 grams
  • chorizo (sliced) - 100 grams
  • olive oil - 2 tablespoons
  • shredded mozzarella cheese - 100 grams
  • fresh parsley (chopped) - 2 tablespoons
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the diced potatoes and cook for about 10-12 minutes until they are tender and slightly golden, stirring occasionally.
  2. Add the diced onion and red bell pepper to the skillet with the potatoes, season with salt and pepper, and cook for another 5 minutes until the vegetables are softened.
  3. In a separate bowl, beat the eggs and season with a pinch of salt and pepper. Once the vegetables are cooked, add the chorizo slices to the skillet and cook for an additional 2 minutes.
  4. Pour the beaten eggs over the potato and vegetable mixture, spreading it evenly. Cook on low heat for about 8-10 minutes until the edges start to set.
  5. Preheat your oven to 200°C (400°F). Once the edges are set, sprinkle the mozzarella cheese on top and transfer the skillet to the oven.
  6. Bake for 5-7 minutes until the cheese is melted and bubbly. Remove from the oven and let it cool slightly before slicing.
  7. Garnish with chopped fresh parsley and serve warm.
