Ingredients

  • Pizza dough - 200 grams
  • Firm tofu - 150 grams
  • Asparagus - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Tomato sauce - 100 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, for garnish

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Wrap the tofu in a clean kitchen towel and press it to remove excess moisture for about 10 minutes.
  3. While the tofu is pressing, trim the asparagus and cut it into 2-inch pieces.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat, then add the minced garlic and sauté for 1 minute until fragrant.
  5. Add the asparagus, smoked paprika, salt, and black pepper. Sauté for 5-7 minutes, until the asparagus is tender but still crisp. Remove from heat.
  6. Once the tofu is pressed, cut it into small cubes and marinate it in a bowl with the remaining olive oil, nutritional yeast, salt, and black pepper for 5 minutes.
  7. Roll out the pizza dough on a floured surface to your desired thickness and shape.
  8. Spread the tomato sauce evenly over the rolled-out dough.
  9. Distribute the marinated tofu cubes and sautéed asparagus on top of the tomato sauce.
  10. Place the pizza in the preheated oven and bake for 12-15 minutes, or until the crust is golden and crispy.
  11. Remove the pizza from the oven and let it cool for a minute. Garnish with fresh basil before slicing and serving.
