- Red bell pepper - 1 medium, sliced
- Red onion - 1 small, sliced
- Cherry tomatoes - 100 grams, halved
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)
Steps
- Preheat the oven to 220°C (428°F).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cubed tofu to the skillet, along with smoked paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the tofu is golden and slightly crispy.
- In the same skillet, add the sliced red bell pepper and red onion. Sauté for an additional 3-4 minutes until the vegetables are tender.
- Roll out the pizza dough on a floured surface to your desired thickness and place it on a baking tray lined with parchment paper.
- Spread the sautéed tofu and vegetable mixture evenly over the pizza base. Top with halved cherry tomatoes and sprinkle with nutritional yeast if using.
- Drizzle the remaining tablespoon of olive oil over the pizza.
- Bake in the preheated oven for 12-15 minutes until the crust is golden and crispy.
- Remove from the oven, garnish with chopped fresh parsley, slice, and serve hot.
