  • Red bell pepper - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Cherry tomatoes - 100 grams, halved
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Nutritional yeast - 2 tablespoons (optional, for a cheesy flavor)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the cubed tofu to the skillet, along with smoked paprika, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the tofu is golden and slightly crispy.
  4. In the same skillet, add the sliced red bell pepper and red onion. Sauté for an additional 3-4 minutes until the vegetables are tender.
  5. Roll out the pizza dough on a floured surface to your desired thickness and place it on a baking tray lined with parchment paper.
  6. Spread the sautéed tofu and vegetable mixture evenly over the pizza base. Top with halved cherry tomatoes and sprinkle with nutritional yeast if using.
  7. Drizzle the remaining tablespoon of olive oil over the pizza.
  8. Bake in the preheated oven for 12-15 minutes until the crust is golden and crispy.
  9. Remove from the oven, garnish with chopped fresh parsley, slice, and serve hot.
