Ingredients

  • Whole wheat pizza dough - 200 grams
  • Firm tofu - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Zucchini - 1 small, sliced
  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, shredded
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Press the tofu to remove excess moisture and cut it into small cubes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant.
  4. Add the tofu cubes to the skillet, along with salt, pepper, and oregano. Cook for about 5-7 minutes until golden brown.
  5. Roll out the whole wheat pizza dough on a floured surface to your desired thickness.
  6. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  7. Spread the tomato sauce evenly over the pizza base.
  8. Top the sauce with sautéed tofu, sliced bell pepper, red onion, and zucchini.
  9. Sprinkle shredded mozzarella cheese over the toppings.
  10. Drizzle the remaining tablespoon of olive oil on top.
  11. Bake the pizza in the preheated oven for 15-20 minutes or until the crust is golden and the cheese is bubbling.
  12. Remove from the oven, let it cool for a couple of minutes, slice, and serve.
