  • Pesto sauce - 4 tablespoons
  • Cherry tomatoes, halved - 100 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil leaves - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Steam or microwave the cauliflower florets until tender, about 5-7 minutes.
  3. Once cooked, let the cauliflower cool slightly, then pulse it in a food processor until it resembles rice.
  4. Place the processed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a mixing bowl, combine the cauliflower, 100 grams of mozzarella, Parmesan cheese, egg, salt, and pepper to form a dough.
  6. Spread the dough onto a parchment-lined baking sheet, shaping it into a pizza crust with a thickness of about 1 cm.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until it is golden and firm.
  8. Remove the crust from the oven and spread the pesto sauce evenly over the top.
  9. Evenly distribute the shredded chicken and cherry tomatoes over the pesto.
  10. Sprinkle the remaining mozzarella cheese on top, then return the pizza to the oven for an additional 10-12 minutes, or until the cheese is bubbly and slightly golden.
  11. Once done, remove from the oven, let it cool for a few minutes, then garnish with fresh basil leaves before slicing and serving.
