Steps
- Preheat your oven to 200°C (400°F).
- Steam or microwave the cauliflower florets until tender, about 5-7 minutes.
- Once cooked, let the cauliflower cool slightly, then pulse it in a food processor until it resembles rice.
- Place the processed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, 100 grams of mozzarella, Parmesan cheese, egg, salt, and pepper to form a dough.
- Spread the dough onto a parchment-lined baking sheet, shaping it into a pizza crust with a thickness of about 1 cm.
- Bake the crust in the preheated oven for 15-20 minutes, or until it is golden and firm.
- Remove the crust from the oven and spread the pesto sauce evenly over the top.
- Evenly distribute the shredded chicken and cherry tomatoes over the pesto.
- Sprinkle the remaining mozzarella cheese on top, then return the pizza to the oven for an additional 10-12 minutes, or until the cheese is bubbly and slightly golden.
- Once done, remove from the oven, let it cool for a few minutes, then garnish with fresh basil leaves before slicing and serving.
