  • Zucchini - 1 medium, diced
  • Eggplant - 100 grams, diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato puree - 200 grams
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful, chopped
  • Nutritional yeast - 2 tablespoons (optional for cheesy flavor)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the diced red bell pepper, zucchini, and eggplant to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in the tomato puree, paprika, salt, and black pepper. Simmer for an additional 5 minutes until the mixture thickens slightly.
  5. Roll out the whole wheat pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet lined with parchment paper.
  6. Spread the vegetable mixture evenly over the pizza base, leaving a small border around the edges.
  7. Sprinkle chopped fresh basil and nutritional yeast (if using) over the top.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
