- Zucchini - 1 medium, diced
- Eggplant - 100 grams, diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato puree - 200 grams
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - a handful, chopped
- Nutritional yeast - 2 tablespoons (optional for cheesy flavor)
Steps
- Preheat the oven to 220°C (428°F).
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced red bell pepper, zucchini, and eggplant to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the tomato puree, paprika, salt, and black pepper. Simmer for an additional 5 minutes until the mixture thickens slightly.
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness, then transfer it to a baking sheet lined with parchment paper.
- Spread the vegetable mixture evenly over the pizza base, leaving a small border around the edges.
- Sprinkle chopped fresh basil and nutritional yeast (if using) over the top.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
