- Padrón peppers - 150 grams
- Cherry tomatoes - 100 grams, halved
- Mozzarella cheese - 100 grams, shredded
- Extra virgin olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Fresh basil - a handful, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled-out dough to a baking sheet lined with parchment paper.
- In a small bowl, mix the minced garlic with 1 tablespoon of olive oil and brush it over the pizza base.
- Arrange the halved cherry tomatoes evenly over the pizza base.
- Sauté the Padrón peppers in a skillet with the remaining tablespoon of olive oil for about 2-3 minutes until slightly blistered, then distribute them on top of the tomatoes.
- Sprinkle shredded mozzarella cheese over the vegetables and season with salt and black pepper to taste.
- Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
- Remove from the oven and garnish with chopped fresh basil before slicing and serving.
