Ingredients

  • Whole wheat pizza dough - 200 grams
  • Padrón peppers - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Mozzarella cheese - 100 grams, shredded
  • Extra virgin olive oil - 2 tablespoons
  • Garlic - 1 clove, minced
  • Fresh basil - a handful, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. In a small bowl, mix the minced garlic with 1 tablespoon of olive oil and brush it over the pizza base.
  5. Arrange the halved cherry tomatoes evenly over the pizza base.
  6. Sauté the Padrón peppers in a skillet with the remaining tablespoon of olive oil for about 2-3 minutes until slightly blistered, then distribute them on top of the tomatoes.
  7. Sprinkle shredded mozzarella cheese over the vegetables and season with salt and black pepper to taste.
  8. Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.
  9. Remove from the oven and garnish with chopped fresh basil before slicing and serving.
