Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese, shredded - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Almond flour - 40 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Pesto - 100 grams
  • Chorizo, sliced - 100 grams
  • Bell peppers, sliced - 50 grams
  • Black olives, sliced - 30 grams

Steps

  1. Preheat the oven to 220°C (428°F).
  2. To make the cauliflower crust, steam the cauliflower florets until tender, about 5-7 minutes.
  3. Once cooled, blend the cauliflower in a food processor until it resembles rice.
  4. Transfer the riced cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
  5. In a bowl, mix the riced cauliflower with 100 grams of mozzarella cheese, parmesan cheese, almond flour, egg, olive oil, and salt until combined.
  6. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust about 1 cm thick.
  7. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown.
  8. Remove the crust from the oven and spread the pesto evenly over the top.
  9. Layer the sliced chorizo, bell peppers, and black olives over the pesto.
  10. Sprinkle the remaining mozzarella cheese on top of the pizza.
  11. Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  12. Allow the pizza to cool for a few minutes before slicing and serving.
