Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Duck breast - 200 grams, cooked and shredded
  • Tomato sauce - 100 grams (no sugar added)
  • Dried oregano - 1 teaspoon
  • Fresh basil leaves - a handful, chopped
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Remove the leaves and stem from the cauliflower, then cut it into florets and steam until tender, about 10 minutes.
  3. Once cooked, let the cauliflower cool slightly, then transfer it to a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a mixing bowl, combine the cauliflower, mozzarella cheese, cream cheese, egg, garlic powder, salt, and black pepper. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking tray lined with parchment paper, shaping it into a pizza crust about 1.5 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden and firm.
  7. While the crust is baking, heat olive oil in a skillet over medium heat and add the shredded duck. Stir in the tomato sauce and oregano, cooking for about 5 minutes until heated through.
  8. Once the crust is done, remove it from the oven and spread the duck mixture evenly over the top.
  9. Return the pizza to the oven and bake for an additional 5-7 minutes.
  10. Remove from the oven, garnish with fresh basil, slice, and serve hot.
