Ingredients

  • Whole wheat flour - 150 grams
  • Water - 100 ml
  • Olive oil - 1 tablespoon
  • Active dry yeast - 5 grams
  • Salt - 1/2 teaspoon
  • Fresh spinach - 100 grams
  • Walnuts - 50 grams, chopped
  • Tomato sauce - 100 grams
  • Nutritional yeast - 2 tablespoons
  • Garlic - 1 clove, minced
  • Black pepper - to taste
  • Oregano - 1 teaspoon

Steps

  1. In a bowl, combine warm water (not hot) with active dry yeast and let it sit for 5 minutes until frothy.
  2. In a separate large bowl, mix whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  4. Preheat the oven to 220°C (428°F).
  5. While the dough is rising, wash and sauté the spinach in a pan over medium heat with a little olive oil and minced garlic until wilted. Season with black pepper and set aside.
  6. Once the dough has risen, roll it out on a floured surface to your desired thickness. Transfer it to a baking sheet lined with parchment paper.
  7. Spread the tomato sauce evenly over the pizza base, leaving a small border around the edges.
  8. Top the sauce with sautéed spinach, chopped walnuts, and sprinkle nutritional yeast and oregano over the top.
  9. Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
  10. Remove from the oven, let it cool for a couple of minutes, slice, and serve warm.
