- Whole wheat flour - 150 grams
- Water - 100 ml
- Olive oil - 1 tablespoon
- Active dry yeast - 5 grams
- Salt - 1/2 teaspoon
- Fresh spinach - 100 grams
- Walnuts - 50 grams, chopped
- Tomato sauce - 100 grams
- Nutritional yeast - 2 tablespoons
- Garlic - 1 clove, minced
- Black pepper - to taste
- Oregano - 1 teaspoon
Steps
- In a bowl, combine warm water (not hot) with active dry yeast and let it sit for 5 minutes until frothy.
- In a separate large bowl, mix whole wheat flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a lightly greased bowl, cover with a cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- While the dough is rising, wash and sauté the spinach in a pan over medium heat with a little olive oil and minced garlic until wilted. Season with black pepper and set aside.
- Once the dough has risen, roll it out on a floured surface to your desired thickness. Transfer it to a baking sheet lined with parchment paper.
- Spread the tomato sauce evenly over the pizza base, leaving a small border around the edges.
- Top the sauce with sautéed spinach, chopped walnuts, and sprinkle nutritional yeast and oregano over the top.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
- Remove from the oven, let it cool for a couple of minutes, slice, and serve warm.
