- Cooked green lentils - 150 grams
- Tomato sauce - 100 grams
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, sliced
- Red onion - 1 small, thinly sliced
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Oregano - 1 teaspoon
- Basil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Nutritional yeast - 2 tablespoons (optional, for cheesy flavor)
Steps
- Preheat the oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
- Place the rolled out dough on a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced red bell pepper, sliced zucchini, and red onion to the skillet. Cook for about 5-7 minutes until the vegetables are slightly tender.
- Stir in the cooked lentils, oregano, basil, salt, and black pepper. Cook for another 2-3 minutes to warm through.
- Spread the tomato sauce evenly over the pizza dough.
- Top with the lentil and vegetable mixture, spreading it evenly across the pizza.
- If using, sprinkle nutritional yeast on top for added flavor.
- Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
- Remove from the oven, let cool for a couple of minutes, slice, and serve warm.
