Ingredients

  • Whole wheat pizza dough - 200 grams
  • Cooked green lentils - 150 grams
  • Tomato sauce - 100 grams
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, thinly sliced
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Oregano - 1 teaspoon
  • Basil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Nutritional yeast - 2 tablespoons (optional, for cheesy flavor)

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Roll out the whole wheat pizza dough on a floured surface to your desired thickness and shape.
  3. Place the rolled out dough on a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the diced red bell pepper, sliced zucchini, and red onion to the skillet. Cook for about 5-7 minutes until the vegetables are slightly tender.
  6. Stir in the cooked lentils, oregano, basil, salt, and black pepper. Cook for another 2-3 minutes to warm through.
  7. Spread the tomato sauce evenly over the pizza dough.
  8. Top with the lentil and vegetable mixture, spreading it evenly across the pizza.
  9. If using, sprinkle nutritional yeast on top for added flavor.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden and crispy.
  11. Remove from the oven, let cool for a couple of minutes, slice, and serve warm.
