Ingredients

  • Canned chickpeas - 240 grams (drained and rinsed)
  • Ground flaxseed - 2 tablespoons
  • Water - 5 tablespoons
  • Oats - 60 grams (ground into flour)
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Tomato sauce - 100 grams
  • Bell pepper - 1 medium, sliced
  • Zucchini - 1 small, sliced
  • Red onion - 1/2 medium, thinly sliced
  • Nutritional yeast - 2 tablespoons (optional for cheesy flavor)
  • Fresh basil - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes to thicken.
  3. In a food processor, combine the drained chickpeas, ground oats, garlic powder, cumin, paprika, salt, and the flax mixture. Blend until a smooth dough forms.
  4. Line a baking sheet with parchment paper and spread the chickpea dough into a round pizza shape, about 1 cm thick.
  5. Bake the crust in the preheated oven for 15 minutes until it is firm and slightly golden.
  6. Remove the crust from the oven and spread the tomato sauce evenly over the top.
  7. Arrange the sliced bell pepper, zucchini, and red onion on top of the sauce.
  8. Sprinkle nutritional yeast over the vegetables if using.
  9. Return the pizza to the oven and bake for an additional 10-15 minutes until the vegetables are tender.
  10. Remove from the oven, garnish with fresh basil, slice, and serve hot.
