Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Mushrooms (cremini or button) - 200 grams, sliced
  • Red bell pepper - 1, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Black pepper - to taste
  • Tomato sauce - 100 grams
  • Nutritional yeast - 2 tablespoons

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Place in a lightly greased bowl and cover with a cloth. Let rise in a warm place for 20 minutes.
  4. While the dough is rising, heat a skillet over medium heat and add a tablespoon of olive oil. Sauté the minced garlic for about 1 minute until fragrant.
  5. Add the sliced mushrooms and red bell pepper to the skillet. Cook for about 5-7 minutes until softened and any moisture has evaporated. Season with oregano, black pepper, and half of the chopped parsley. Set aside.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, roll it out on a floured surface into a 30 cm (12 inch) round shape.
  8. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spread tomato sauce evenly over the base.
  9. Top the sauce with the sautéed mushroom mixture and sprinkle nutritional yeast on top.
  10. Bake in the preheated oven for 12-15 minutes or until the crust is golden and crispy.
  11. Remove from the oven and garnish with the remaining parsley before slicing and serving.
