  • Cherry tomatoes - 150 grams, halved
  • Bell pepper - 1 medium, diced
  • Red onion - 1/2 medium, thinly sliced
  • Nutritional yeast - 2 tablespoons
  • Fresh basil - for garnish

Steps

  1. Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
  3. In a large mixing bowl, combine the grated zucchini, almond flour, ground flaxseed, olive oil, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  4. Add the water gradually, mixing until a dough forms. If it's too sticky, add a bit more almond flour.
  5. Transfer the dough to the prepared baking sheet and press it into a thin, even layer, shaping it into a pizza crust.
  6. Bake the crust in the preheated oven for 20 minutes or until it is golden brown and firm to the touch.
  7. While the crust is baking, prepare the toppings by mixing the cherry tomatoes, diced bell pepper, and sliced red onion in a bowl. Season with salt and pepper.
  8. Once the crust is done, remove it from the oven and sprinkle the nutritional yeast evenly over the top.
