- Canned chickpeas - 1 cup (240g), drained and rinsed
- Cherry tomatoes - 1 cup (150g), halved
- Feta cheese - 100g, crumbled
- Fresh basil - 1/4 cup (15g), chopped
- Garlic powder - 1/2 teaspoon (2g)
- Paprika - 1/2 teaspoon (2g)
- Parmesan cheese - 30g, grated
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
- Drizzle the olive oil over the eggplant slices and season with salt, black pepper, garlic powder, and paprika.
- Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through, until tender and slightly golden.
- In a bowl, combine the chickpeas, halved cherry tomatoes, and crumbled feta cheese. Mix well.
- Once the eggplant is done roasting, remove it from the oven and top each slice with the chickpea mixture.
- Return the baking sheet to the oven and bake for an additional 10 minutes.
- Remove from the oven, sprinkle with fresh basil and grated Parmesan cheese before serving.
