Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Canned chickpeas - 1 cup (240g), drained and rinsed
  • Cherry tomatoes - 1 cup (150g), halved
  • Feta cheese - 100g, crumbled
  • Fresh basil - 1/4 cup (15g), chopped
  • Garlic powder - 1/2 teaspoon (2g)
  • Paprika - 1/2 teaspoon (2g)
  • Parmesan cheese - 30g, grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and place them on a baking sheet.
  3. Drizzle the olive oil over the eggplant slices and season with salt, black pepper, garlic powder, and paprika.
  4. Roast the eggplant in the preheated oven for 20 minutes, flipping halfway through, until tender and slightly golden.
  5. In a bowl, combine the chickpeas, halved cherry tomatoes, and crumbled feta cheese. Mix well.
  6. Once the eggplant is done roasting, remove it from the oven and top each slice with the chickpea mixture.
  7. Return the baking sheet to the oven and bake for an additional 10 minutes.
  8. Remove from the oven, sprinkle with fresh basil and grated Parmesan cheese before serving.
