  • Tomato sauce - 100 grams
  • Mozzarella cheese - 100 grams, grated
  • Feta cheese - 50 grams, crumbled
  • Fresh basil leaves - a handful

Steps

  1. Preheat the oven to 220°C (428°F).
  2. Slice the eggplant into 1/2 cm thick rounds and sprinkle with salt. Let it sit for 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. In a bowl, toss the eggplant slices with olive oil, black pepper, and minced garlic.
  5. Spread the eggplant on a baking sheet and roast in the preheated oven for 15 minutes, flipping halfway through, until golden and tender.
  6. While the eggplant is roasting, roll out the pizza dough on a lightly floured surface to your desired thickness.
  7. Transfer the rolled-out dough to a pizza stone or baking sheet lined with parchment paper.
  8. Spread the tomato sauce evenly over the pizza dough, leaving a small border around the edges.
  9. Once the eggplant is done roasting, layer the slices over the tomato sauce.
  10. Sprinkle the grated mozzarella and crumbled feta cheese over the eggplant.
  11. Bake the pizza in the oven for 12-15 minutes or until the cheese is bubbly and the crust is golden brown.
  12. Remove from the oven and garnish with fresh basil leaves before slicing and serving.
