- Gluten-free pizza dough - 200 grams
- Fresh clams - 200 grams, cleaned
- Cherry tomatoes - 100 grams, halved
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/4 teaspoon (optional)
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, for zest and juice
Steps
- Preheat the oven to 220°C (425°F).
- Roll out the gluten-free pizza dough on a lightly floured surface to your desired thickness.
- Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
- In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the cleaned clams to the skillet and cook for 2-3 minutes until they start to open, then add the halved cherry tomatoes, salt, black pepper, and red pepper flakes (if using). Stir gently and cook for another 2-3 minutes until the tomatoes soften.
- Remove from heat, and stir in the chopped parsley and a squeeze of lemon juice.
- Spread the clam and tomato mixture evenly over the pizza dough.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
- Remove from the oven, garnish with lemon zest and additional parsley if desired, and serve immediately.
