Ingredients

  • Gluten-free pizza dough - 200 grams
  • Fresh clams - 200 grams, cleaned
  • Cherry tomatoes - 100 grams, halved
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for zest and juice

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the gluten-free pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the rolled-out dough onto a baking sheet lined with parchment paper.
  4. In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  5. Add the cleaned clams to the skillet and cook for 2-3 minutes until they start to open, then add the halved cherry tomatoes, salt, black pepper, and red pepper flakes (if using). Stir gently and cook for another 2-3 minutes until the tomatoes soften.
  6. Remove from heat, and stir in the chopped parsley and a squeeze of lemon juice.
  7. Spread the clam and tomato mixture evenly over the pizza dough.
  8. Bake in the preheated oven for 12-15 minutes, or until the crust is golden and crispy.
  9. Remove from the oven, garnish with lemon zest and additional parsley if desired, and serve immediately.
