- Fresh basil leaves - 20 grams
- Cherry tomatoes - 150 grams
- Garlic (minced) - 1 clove
- Balsamic vinegar - 1 tablespoon
Steps
- Preheat the oven to 220°C (425°F).
- Grate the cauliflower and steam it for 5 minutes until tender. Allow it to cool, then squeeze out excess moisture using a clean kitchen towel.
- In a mixing bowl, combine the steamed cauliflower, 100 grams of mozzarella, Parmesan cheese, egg, salt, and black pepper. Mix well until a dough forms.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust approximately 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
- While the crust is baking, prepare the topping by halving the cherry tomatoes and mixing them with minced garlic, olive oil, balsamic vinegar, and chopped basil leaves.
- Once the crust is done, remove it from the oven and evenly distribute the tomato mixture over the top.
- Sprinkle the remaining mozzarella cheese on top and return the pizza to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with extra fresh basil leaves, slice, and serve warm.
