  • Cauliflower - 300 grams
  • Mozzarella cheese (shredded) - 150 grams
  • Parmesan cheese (grated) - 30 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil leaves - 20 grams
  • Cherry tomatoes - 150 grams
  • Garlic (minced) - 1 clove
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Grate the cauliflower and steam it for 5 minutes until tender. Allow it to cool, then squeeze out excess moisture using a clean kitchen towel.
  3. In a mixing bowl, combine the steamed cauliflower, 100 grams of mozzarella, Parmesan cheese, egg, salt, and black pepper. Mix well until a dough forms.
  4. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, shaping it into a round pizza crust approximately 1 cm thick.
  5. Bake the crust in the preheated oven for 15-20 minutes or until golden brown and firm.
  6. While the crust is baking, prepare the topping by halving the cherry tomatoes and mixing them with minced garlic, olive oil, balsamic vinegar, and chopped basil leaves.
  7. Once the crust is done, remove it from the oven and evenly distribute the tomato mixture over the top.
  8. Sprinkle the remaining mozzarella cheese on top and return the pizza to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven, garnish with extra fresh basil leaves, slice, and serve warm.
