Ingredients

  • Zucchini - 2 medium (about 400g)
  • Red bell pepper - 1 medium (about 150g)
  • Green bell pepper - 1 medium (about 150g)
  • Onion - 1 medium (about 100g)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Tomato puree - 200g
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Fresh basil - a handful, chopped
  • Paprika - 1/2 teaspoon (2g)

Steps

  1. Wash and dice the zucchini, red bell pepper, green bell pepper, and onion into small cubes.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the diced zucchini and bell peppers to the skillet, stirring well to combine.
  6. Cook the vegetables for about 10 minutes, stirring occasionally until they start to soften.
  7. Pour in the tomato puree and add salt, black pepper, and paprika; stir well to combine.
  8. Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
  9. Remove from heat and stir in the chopped fresh basil just before serving.
  10. Serve warm, either on its own or with crusty bread.
