- Red bell pepper - 1 medium (about 150g)
- Green bell pepper - 1 medium (about 150g)
- Onion - 1 medium (about 100g)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Tomato puree - 200g
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Fresh basil - a handful, chopped
- Paprika - 1/2 teaspoon (2g)
Steps
- Wash and dice the zucchini, red bell pepper, green bell pepper, and onion into small cubes.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and bell peppers to the skillet, stirring well to combine.
- Cook the vegetables for about 10 minutes, stirring occasionally until they start to soften.
- Pour in the tomato puree and add salt, black pepper, and paprika; stir well to combine.
- Reduce the heat to low and let the mixture simmer for about 10 minutes, allowing the flavors to meld.
- Remove from heat and stir in the chopped fresh basil just before serving.
- Serve warm, either on its own or with crusty bread.
