- Ground beef - 300 grams
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
- Fresh parsley - for garnish
Steps
- Dice the zucchini, red bell pepper, green bell pepper, eggplant, and onion into small pieces.
- Finely chop the garlic cloves.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
- Add the diced eggplant to the skillet and cook for about 5 minutes, stirring occasionally.
- Next, add the zucchini and bell peppers to the skillet. Season with salt, black pepper, and paprika. Cook for another 10 minutes until the vegetables are tender.
- While the vegetables are cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the ground beef, breaking it up with a spatula, and cook until browned and fully cooked, about 7-10 minutes.
- Combine the cooked ground beef with the sautéed vegetables in the skillet, mixing well to incorporate the flavors. Adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
