  • Eggplant - 150 grams
  • Onion - 100 grams
  • Garlic - 2 cloves
  • Ground beef - 300 grams
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Dice the zucchini, red bell pepper, green bell pepper, eggplant, and onion into small pieces.
  2. Finely chop the garlic cloves.
  3. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent.
  4. Add the diced eggplant to the skillet and cook for about 5 minutes, stirring occasionally.
  5. Next, add the zucchini and bell peppers to the skillet. Season with salt, black pepper, and paprika. Cook for another 10 minutes until the vegetables are tender.
  6. While the vegetables are cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the ground beef, breaking it up with a spatula, and cook until browned and fully cooked, about 7-10 minutes.
  7. Combine the cooked ground beef with the sautéed vegetables in the skillet, mixing well to incorporate the flavors. Adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
