Ingredients

  • Ground beef (80% lean) - 300 grams
  • Eggplant - 100 grams, diced
  • Zucchini - 100 grams, diced
  • Red bell pepper - 50 grams, diced
  • Onion - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Tomato puree - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped
  • Cheese (optional) - 40 grams, sliced

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sauté until translucent, about 3-4 minutes.
  2. Add the diced eggplant, zucchini, and red bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally until the vegetables are tender.
  3. Stir in the tomato puree, paprika, salt, and black pepper. Cook for an additional 5 minutes, allowing the flavors to meld. Remove from heat and stir in chopped parsley.
  4. While the vegetables are cooking, form the ground beef into two patties. Season both sides with salt and pepper.
  5. In a separate skillet or grill, cook the patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness.
  6. If using cheese, place a slice on each patty during the last minute of cooking to melt.
  7. To assemble the burger, place each beef patty on a plate, top with the pisto vegetable mixture, and serve immediately.
