  • Vanilla extract - 1 teaspoon
  • Butter - 30 grams (melted)
  • Cream cheese - 100 grams
  • Powdered sugar - 50 grams
  • Cocoa powder - 2 tablespoons
  • Heavy cream - 100 ml

Steps

  1. Preheat your oven to 180°C (350°F) and line a 20x30 cm baking tray with parchment paper.
  2. In a mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy.
  3. In another bowl, combine the cornstarch and baking powder, then gently fold it into the egg mixture along with the milk and vanilla extract.
  4. Pour the batter into the prepared baking tray, spreading it evenly, and bake for 12-15 minutes or until lightly golden and a toothpick comes out clean.
  5. Once baked, remove the sponge from the oven and let it cool for a few minutes before inverting it onto a clean kitchen towel dusted with powdered sugar.
  6. Carefully peel off the parchment paper and roll the sponge cake tightly in the towel to form a log shape. Let it cool completely.
  7. While the cake is cooling, prepare the filling by beating the cream cheese, powdered sugar, cocoa powder, and heavy cream together until smooth and fluffy.
  8. Once the sponge cake is cool, unroll it gently and spread the cream cheese filling evenly over the surface.
  9. Roll the cake back up tightly, this time without the towel, and wrap it in plastic wrap. Refrigerate for at least 30 minutes to set.
  10. Slice the pionono into rounds and serve chilled, optionally dusting with additional powdered sugar.
