  • Greek yogurt - 100 grams
  • Almonds (ground) - 30 grams
  • Pomegranate seeds - 50 grams
  • Honey - 1 tablespoon
  • Vanilla extract - 1 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and line a baking tray (approximately 30x20 cm) with parchment paper.
  2. In a mixing bowl, whisk the eggs and sugar together until the mixture is light and fluffy.
  3. Sift the flour and baking powder into the egg mixture, gently folding until just combined.
  4. Pour the batter into the prepared baking tray, spreading it evenly, and bake for 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  5. While the cake is baking, mix the Greek yogurt, ground almonds, honey, and vanilla extract in a separate bowl until smooth.
  6. Once the cake is done, allow it to cool for a few minutes before transferring it to a clean kitchen towel dusted with sugar.
  7. Carefully peel off the parchment paper and spread the yogurt-almond mixture evenly over the cake.
  8. Roll the cake tightly using the towel, starting from one edge, to form a log shape. Let it cool in the towel for about 10 minutes.
  9. Once cooled, unroll the cake, sprinkle pomegranate seeds on top, and re-roll it gently.
  10. Slice into 6 pieces and serve chilled.
