- Greek yogurt - 100 grams
- Almonds (ground) - 30 grams
- Pomegranate seeds - 50 grams
- Honey - 1 tablespoon
- Vanilla extract - 1 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and line a baking tray (approximately 30x20 cm) with parchment paper.
- In a mixing bowl, whisk the eggs and sugar together until the mixture is light and fluffy.
- Sift the flour and baking powder into the egg mixture, gently folding until just combined.
- Pour the batter into the prepared baking tray, spreading it evenly, and bake for 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- While the cake is baking, mix the Greek yogurt, ground almonds, honey, and vanilla extract in a separate bowl until smooth.
- Once the cake is done, allow it to cool for a few minutes before transferring it to a clean kitchen towel dusted with sugar.
- Carefully peel off the parchment paper and spread the yogurt-almond mixture evenly over the cake.
- Roll the cake tightly using the towel, starting from one edge, to form a log shape. Let it cool in the towel for about 10 minutes.
- Once cooled, unroll the cake, sprinkle pomegranate seeds on top, and re-roll it gently.
- Slice into 6 pieces and serve chilled.
