- 2 large bell peppers (red or green) - 300 grams
- 1 cup cooked rice - 200 grams
- 1 tablespoon olive oil - 15 ml
- 1 small onion, finely chopped - 100 grams
- 1 garlic clove, minced - 3 grams
- 1 medium tomato, diced - 120 grams
- 1/2 teaspoon smoked paprika - 2 grams
- 1/2 teaspoon ground cumin - 2 grams
- Salt to taste - 2 grams
- Black pepper to taste - 1 gram
- Fresh parsley, chopped (for garnish) - 5 grams
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until softened, about 3-4 minutes.
- Stir in the diced tomato, smoked paprika, ground cumin, salt, and black pepper. Cook for an additional 5 minutes until the tomato is soft.
- Combine the cooked rice with the tomato mixture in the skillet, mixing well to combine all ingredients.
- Stuff each bell pepper with the rice mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish to create steam.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
- Remove from the oven and let cool for a few minutes before serving. Garnish with fresh chopped parsley.
