Ingredients
- 2 large bell peppers (red or green)
- 4 large eggs
- 100 grams of chorizo, diced
- 50 grams of feta cheese, crumbled
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat the olive oil over medium heat and add the diced chorizo. Cook for 5-7 minutes until browned and crispy.
- In a bowl, whisk the eggs and season with smoked paprika, salt, and pepper.
- Add the cooked chorizo to the egg mixture along with the crumbled feta cheese. Mix well.
- Stuff the bell peppers with the egg and chorizo mixture, packing it down slightly.
- Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the eggs are set and the tops are slightly golden.
- Garnish with fresh parsley before serving.
