Ingredients

  • 2 large bell peppers (red or green)
  • 4 large eggs
  • 100 grams of chorizo, diced
  • 50 grams of feta cheese, crumbled
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat the olive oil over medium heat and add the diced chorizo. Cook for 5-7 minutes until browned and crispy.
  4. In a bowl, whisk the eggs and season with smoked paprika, salt, and pepper.
  5. Add the cooked chorizo to the egg mixture along with the crumbled feta cheese. Mix well.
  6. Stuff the bell peppers with the egg and chorizo mixture, packing it down slightly.
  7. Place the stuffed peppers upright in a baking dish and add a splash of water to the bottom of the dish.
  8. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  9. Remove the foil and bake for an additional 5-10 minutes, or until the eggs are set and the tops are slightly golden.
  10. Garnish with fresh parsley before serving.
