Ingredients

  • Padrón peppers - 10
  • Goat cheese - 100 grams
  • Cream cheese - 50 grams
  • Fresh parsley - 1 tablespoon, chopped
  • Fresh chives - 1 tablespoon, chopped
  • Garlic - 1 clove, minced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the goat cheese, cream cheese, chopped parsley, chopped chives, minced garlic, salt, and black pepper. Mix well until smooth and creamy.
  3. Carefully make a slit in each Padrón pepper and remove the seeds without splitting them open completely.
  4. Stuff each pepper with the cheese filling using a small spoon or piping bag.
  5. Place the stuffed peppers on a baking tray lined with parchment paper.
  6. Drizzle olive oil over the stuffed peppers.
  7. Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and slightly blistered.
  8. Remove from the oven and let cool slightly before serving.
