- Padrón peppers - 10
- Goat cheese - 100 grams
- Cream cheese - 50 grams
- Fresh parsley - 1 tablespoon, chopped
- Fresh chives - 1 tablespoon, chopped
- Garlic - 1 clove, minced
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the goat cheese, cream cheese, chopped parsley, chopped chives, minced garlic, salt, and black pepper. Mix well until smooth and creamy.
- Carefully make a slit in each Padrón pepper and remove the seeds without splitting them open completely.
- Stuff each pepper with the cheese filling using a small spoon or piping bag.
- Place the stuffed peppers on a baking tray lined with parchment paper.
- Drizzle olive oil over the stuffed peppers.
- Bake in the preheated oven for about 15-20 minutes, or until the peppers are tender and slightly blistered.
- Remove from the oven and let cool slightly before serving.
