Ingredients
- Red bell pepper - 2 large
- Canned vegetable tuna - 200 grams
- Olive oil - 2 tablespoons
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Capers - 1 tablespoon, rinsed and chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Cut the tops off the red bell peppers and remove the seeds and membranes.
- Place the peppers upright in a baking dish and drizzle with 1 tablespoon of olive oil. Roast in the preheated oven for about 20 minutes, or until the skins are slightly blistered and the peppers are tender.
- While the peppers are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened.
- Add the minced garlic and sauté for another minute until fragrant.
- In a bowl, combine the sautéed onion and garlic with the canned vegetable tuna, capers, parsley, lemon juice, salt, and black pepper. Mix well until combined.
- Once the peppers are done roasting, remove them from the oven and let them cool for a few minutes.
- Stuff each roasted pepper with the vegetable tuna mixture, pressing down gently to pack it in.
- Return the stuffed peppers to the oven and bake for an additional 5-7 minutes to heat through.
- Serve warm, garnished with extra parsley if desired.
