Ingredients

  • Red bell pepper - 2 large
  • Canned vegetable tuna - 200 grams
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Capers - 1 tablespoon, rinsed and chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the tops off the red bell peppers and remove the seeds and membranes.
  3. Place the peppers upright in a baking dish and drizzle with 1 tablespoon of olive oil. Roast in the preheated oven for about 20 minutes, or until the skins are slightly blistered and the peppers are tender.
  4. While the peppers are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chopped red onion and sauté for 3-4 minutes until softened.
  5. Add the minced garlic and sauté for another minute until fragrant.
  6. In a bowl, combine the sautéed onion and garlic with the canned vegetable tuna, capers, parsley, lemon juice, salt, and black pepper. Mix well until combined.
  7. Once the peppers are done roasting, remove them from the oven and let them cool for a few minutes.
  8. Stuff each roasted pepper with the vegetable tuna mixture, pressing down gently to pack it in.
  9. Return the stuffed peppers to the oven and bake for an additional 5-7 minutes to heat through.
  10. Serve warm, garnished with extra parsley if desired.
