Ingredients

  • Almond flour - 150 grams
  • Coconut oil - 30 grams (melted)
  • Egg - 1 large
  • Erythritol - 20 grams
  • Cinnamon - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Olive oil - for frying

Steps

  1. In a mixing bowl, combine almond flour, erythritol, baking powder, cinnamon, and salt.
  2. In another bowl, whisk together the melted coconut oil, egg, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  4. Cover the dough with plastic wrap and let it rest for 15 minutes.
  5. On a lightly floured surface (using almond flour), roll out the dough to about 1/4 inch thickness.
  6. Cut the dough into diamond shapes, approximately 5 cm by 5 cm.
  7. Heat olive oil in a frying pan over medium heat.
  8. Fry the diamond-shaped pestiños in hot oil for about 2-3 minutes on each side until golden brown.
  9. Remove from oil and place on paper towels to drain excess oil.
  10. Serve warm, optionally dusted with additional erythritol and a sprinkle of cinnamon.
