- Erythritol - 20 grams

- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Olive oil - for frying
Steps
- In a mixing bowl, combine almond flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk together the melted coconut oil, egg, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
- Cover the dough with plastic wrap and let it rest for 15 minutes.
- On a lightly floured surface (using almond flour), roll out the dough to about 1/4 inch thickness.
- Cut the dough into diamond shapes, approximately 5 cm by 5 cm.
- Heat olive oil in a frying pan over medium heat.
- Fry the diamond-shaped pestiños in hot oil for about 2-3 minutes on each side until golden brown.
- Remove from oil and place on paper towels to drain excess oil.
- Serve warm, optionally dusted with additional erythritol and a sprinkle of cinnamon.
